Banana & Caramel Pancakes - Pancake Recipes

Ingredients

FOR THE BATTER:
  • 225g/8oz plain flour
  • 2 medium eggs
  • Up to 500ml/17fl oz milk
FOR THE FILLING:
  • 250g/9oz good quality butter 
  • Dolce de Leche or caramel sauce
  • 6-8 (one per person) ripe bananas, sliced

Method

  1. Sieve the flour and beat in the eggs. Beat in the milk a little at a time until the batter has the consistency of single cream. Leave to stand for at least half an hour before making the pancakes.
  2. Stir Dolce de Leche or caramel sauce consistently over a low heat until sauce is smooth. It shouldn't boil but should be nice and hot.
  3. Fry the pancakes and when bubbles appear, and here comes the fun bit, flip the pancake. Stack the pancakes on top of each other and keep them warm in the oven on a low setting.
  4. Cut the bananas lengthways and place in the middle of each pancake. Put a generous helping of the caramel sauce on top and roll the pancake closed.
  5. Serve with ice cream and drizzle some more sauce over the whole lot.
